When international cool-climate viticulture experts reviewed their land assessments and vineyard plans and concluded that Offaly could indeed produce premium wines, everything changed.

“That moment turned a dream into a credible long-term project,” they share.

At this early stage, every day looks different. Mornings might begin with soil analysis or debates over rootstock options. Afternoons may involve consulting with viticulture specialists or designing the layout of future vineyards.
